Ingredients

For the Dough:

  • 2 ¼ teaspoons (1 packet) active dry yeast
  • ¾ cup (180ml) warm milk (about 110°F/45°C)
  • ¼ cup (50g) granulated sugar
  • 3 cups (360g) all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • 4 tablespoons (60g) unsalted butter, melted
  • 2 teaspoons vanilla extract

For the Apple Filling:

  • 3 large apples (such as Granny Smith), peeled and diced
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter

For Frying and Glazing:

  • Vegetable oil for frying
  • 1 ½ cups (180g) powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

1. Make the Dough:

  • In a small bowl, mix the yeast with warm milk and a pinch of sugar. Let it sit for 5-10 minutes until bubbly.
  • In a large bowl, combine the flour, sugar, salt, cinnamon, and nutmeg. Add the eggs, melted butter, vanilla, and the activated yeast mixture. Mix until the dough comes together.
  • Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover it with a damp towel, and let it rise for 1-2 hours until doubled in size.

2. Prepare the Apple Filling:

  • In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, sugar, cinnamon, and lemon juice. Cook for 5-7 minutes until the apples are soft and caramelized. Set aside to cool.

3. Shape the Fritters:

  • After the dough has risen, punch it down and transfer it to a floured surface. Roll the dough into a large rectangle and spread the cooled apple mixture evenly over half of the dough.
  • Fold the other half of the dough over the apples and gently press to seal. Cut the dough into rough squares (about 4×4 inches) and shape them into loose fritters by gathering the edges and pinching them together. Let the fritters rest for 20-30 minutes.

4. Fry the Fritters:

  • In a deep pan, heat vegetable oil to 350°F (175°C). Fry the fritters in batches, 2-3 minutes per side, until golden brown and crispy. Transfer them to a paper towel-lined tray to drain excess oil.

5. Glaze the Fritters:

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. While the fritters are still warm, dip each one in the glaze or drizzle it generously over the top.
