Creamy Pineapple Cobbler

Creamy Pineapple Cobbler

Ingredients

For the Filling:

  • 2 cups (480g) crushed pineapple (with juice)
  • ½ cup (100g) granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice

For the Creamy Batter:

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (180ml) whole milk
  • ½ teaspoon vanilla extract
  • ½ cup (100g) granulated sugar

For the Topping (Optional):

  • Whipped cream or vanilla ice cream
  • Toasted coconut flakes for garnish

Instructions

1. Prepare the Pineapple Filling:

  • In a medium saucepan, combine the crushed pineapple, sugar, cornstarch, and lemon juice.
  • Stir over medium heat until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool slightly.

2. Make the Creamy Batter:

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, combine the melted butter, milk, vanilla extract, and sugar. Mix until smooth.
  • Gradually add the wet ingredients to the dry ingredients and stir until a smooth batter forms.

3. Assemble the Cobbler:

  • Grease a 9×9-inch baking dish. Pour the creamy batter evenly into the dish.
  • Spoon the cooled pineapple filling over the batter, spreading it gently. Don’t stir—the batter will rise around the fruit as it bakes.

4. Bake:

  • Bake for 40-45 minutes or until the cobbler is golden brown on top and bubbling around the edges.
  • Remove from the oven and let it cool slightly.

5. Serve:

  • Serve warm with whipped cream or a scoop of vanilla ice cream. Garnish with toasted coconut flakes for an extra tropical touch!
